Maintenance tip of the month: Sharpening up bakery operations

Maintaining industrial knives and slicers is essential for optimal performance, product quality, and safety. Regular maintenance, including sharpening, cleaning, and lubrication, keeps blades sharp, reduces waste, improves efficiency, and extends equipment lifespan.

Neglecting maintenance can lead to dull blades, uneven cuts, increased waste, and safety hazards. Sharp blades produce clean cuts, boosting productivity and potentially increasing profit margins. Proper maintenance prevents accidents, ensures food safety, and reduces energy costs. Regular maintenance helps prevent premature wear and tear on equipment, extending its overall lifespan and reducing the need for costly replacements.

To ensure proper maintenance, consider the following:

  • Routine Sharpening:

Sharpening blades regularly restores their sharpness and ensures consistent cutting performance.

  • Regular Cleaning:

Cleaning blades after each use removes debris and prevents the buildup of contaminants that can affect performance and potentially cause contamination.

  • Lubrication:

Lubricating moving parts reduces friction and wear, extending the lifespan of the equipment.

  • Regular Inspection (and replacement when necessary):

Slicing products such as bread wears the cutting surface, and the life of the blade depends on the product (fruited products and seeds cause faster wear, for example). Dull blades give poor slicing performance, and create more crumb loss too.

Not all blades can be sharpened, and ultimately even ones that can be sharpened will eventually need replacing. It is important to inspect blades for wear and damage, such as cracks or chips, and replace them as needed.

Monitoring cutting performance and reviewing the number of cuts completed will give a pattern of wear and optimal replacement timing.

Store knives and slicers in a dry and safe place to prevent rust and damage.
